About Raw Honey
“Raw Honey” is honey that has not been heated past the point of pasteurization. By not heating the honey, it retains all the natural enzymes and properties it has in the hive.
Pasteurization is the process of heating honey at high temperatures to make it easier for bottling. But this process also kills the nutrients naturally found in honey, like vitamins and enzymes.
There are numerous benefits of natural honey, like vitamins, nutrients, antioxidants, and enzymes. Honey that’s been pasteurized ends up being just another processed sugar! So when you’re choosing a natural sweetener, go for raw honey.
But not all honey is alike. A lot of the honey you see on grocery store shelves or in those plastic teddy bear squeeze bottles has been processed, heated, and pasteurized, removing many of its beneficial minerals and enzymes. Some have added sugars and corn syrup. Raw honey is, well, raw, with all the natural health benefits preserved. Basically, the clearer the honey, the more it’s been processed, which is why raw honey is darker, foggier, but better for you.

It's recommended that you use the original container the honey came in, though any glass jar or food-safe plastic container will work. Avoid storing honey in metal because it can oxidize.
